Out of curiosity, have you had “smashed” burgers before? After trying burgers stacked with thin, nicely browned beef patties I prefer them to the really big beef patties you get at some places.

B ut when you need to dislocate your jaw to eat the burger or it needs a skewer to hold it up, it stops being a burger.

The chips look really good too.

If you get the opportunity give it a try. May not be for everyone but it’s also easy to do at home if you have a griddle or a cast iron pan. It’s just a really thin beef patty that develops a nice crust from being cooked in a nicely greased, high-temp pan. You basically need a strong metal spatula so that you can flatten it and also scrape it from the surface of the pan since these fuckers really stick, but that’s how you get the colour and flavour.

I thought it was nuts until I tried it; I was so used to thick, disappointing burgers from backyard barbecue grills that this was a revelation.
